The Story of AppleCarrotop

It happened in the early spring, when the farmers in town were getting ready to plant their fields with fruit and vegetable seeds for the coming summer months. 

The farmers were sorting their seeds by the variety of vegetable and fruit.  The broccoli seeds, carrot seeds, and spinach seeds were all in separate piles.

The strawberry seeds were in another pile.  The farmers also had small apple trees to plant as well as grape vines.


The day was windy.  You could see the school bus swaying in the wind as it pulled up to the bus stop  to take the children to school.  The school bus screeched to a stop and the children safely boarded the bus.  And that's when it happened.  A giant burst of wind swept the trees. grape vines, and seeds everywhere.  The farmers didn't know what seeds were which, and guess what?  Seeds collided and the VeggieFruitables sprouted up.

Apple and Carrot are definitely bff.  Crunch, CRUNCH, crunch!  That's what you hear when Applecarrotop stomps by.  Crunchy, sweet and sometimes tart, apple and carrot are never apart.  Loaded with energy from Vitamins A and C, they are definitely ready for any activity.  When one just feels like being lazy and laying around, the other is there to motivate.  When Apple runs into an obstacle, Carrot is there to help in a crunch.  When Carrot is faced with decisions to make, Apple gives choices to take.  It's give and take (gatw2), but they manage.  Here's how they do it.  Apple loves sweet, baked spicy foods like apple pie, apple crisp, apple dumplings - you get the picture.  Carrot likes snacks with a crunch - carrots and dip, or carrots mixed with yogurt and raisins. It was gatw2, but here's what they came up with:


Applecarrottop and Raisin Salad
serves 4

2 medium apples - try a tart apple like Granny Smith and a sweet apple like Red Delicious
2 carrots, washed, peeled, and shredded
1/2 cup raisins
1 cup vanilla low-fat yogurt

Combine all the ingredients in a medium bowl.  Serve immediately.  Makes 2 servings.

To clean and prepare carrots:

Store carrots in a cool part of the refrigerator.  Cut off any greens on the top.  The tops will pull moisture from the carrot, causing them to wilt.  If the carrots come in a plastic bag, keep them in the bag.  If they don't, wrap them in a paper town to absorb any moisture.  They should keep for 2 weeks.  Store away from apples, pears, or potatoes that produce a gas that can cause them to be bitter.

Clean carrots by gently scrubbing their skin with a vegetable brush before preparing to eat.  If you purchase organic carrots, you can eat the skins, otherwise peel to remove any pesticides.

Carrots are extremely high in beta-carotene, which your body converts to vitamin A.  Cooking breaks down the fiber which releases the sugar and makes the carrot taste sweeter.  The good news is the beta-carotene is not destroyed by cooking.

To purchase, clean, and prepare apples:

Purchase apples that are firm and ripe.  Whole apples make better nutritional choices than apple juice. Ripe apples are more nutritious.  To clean, run under running water.
